Hello Ladies!
~Well... I've had the delight of making cheesecake! :) It is SO much fun!!! I am going to post the recipe I used... SO yummy!!! :)
Strawberry Cheesecake
---------------------------
1 cup graham cracker crumbs
1/4 cup sugar
1/3 cup butter
10 oz. strawberries (frozen or fresh)
1 tablespoon cornstarch
3 8-oz packages cream cheese, softened
1 14 oz. can sweetened condensed milk
2 tablespoons lemon juice
3 eggs
Here are the instructions below...
First, heat up the butter...
Then grind up the graham cracker crumbs. I know an easy way to do this! :) Just put them in a plastic bag and roll the rolling pin on top of the bag, and it goes really quick! :)
Mix the graham cracker crumbs, sugar and butter in a bowl.Stir together....
And press into a spring-form pan. ALWAYS remember to cover your spring-form pan with aluminum foil!
YAY!!!
Set aside... and then blend your strawberries and cornstarch in a blender. If you have fresh strawberries, add a 1/3 cup of sugar to them. You may have to add water to make into a puree.
Bring to a boil... :)
Set aside... and measure out your cream cheese!!! :) That's A LOT of cream cheese!!! :)
Blend up the cream cheese and sweetened condensed milk together...
Pour into your spring-form pan.
And drop most of the strawberry puree by spoonfuls onto your cheesecake. Swirl with a knife.
Bake at 300 degrees for 55-60 minutes. Don't worry if it's a little wobbly. It will set itself when it refrigerates.
Cool for 10 minutes. Run a knife along the sides of the cake. Cool 1 hour.
Serve!!!!! SO yummy!!! :)
You can put the rest of the strawberry sauce over it if you want... I preferred it without.
And it will be ALLLLLLLLLL gone!!! :) YUM!!! :)
